I was doing everything right – exercising, counting calories, and eating a whole foods vegetarian diet. I even gave up cheese and went vegan for a year. But I could not lose even one pound. Sound familiar?
After dealing with years of feeling constantly bloated, frustrated, and tired no matter what I did; I was becoming depressed and on the road to an eating disorder. My doctor said it was a result of being in my late 30s. I just could not accept that.
After thinking I had tried everything, my neighbor mentioned the keto diet, and I decided to start my research. I knew starting the keto diet would be challenging as a vegetarian, but all my research educated me on all the many low-carb vegetables and protein sources I could eat. With some creativity, I was cooking delicious vegetarian keto meals and not feeling deprived at all. After 3 hard days, I was off sugar, and it was so much easier than I could have imagined!
Within 2 weeks, the weight that I struggled to lose during intense exercise and calorie restriction literally melted off (and has stayed off ever since). For the first time in what felt like forever, I didn’t feel bloated. I woke up energized and focused. In fact – I felt absolutely amazing! My skin looks better, I’m more focused during the day, and I don’t have to obsess over calories any longer.
