Move over zoodles; hello cabbage noodles! When I first learned about cabbage noodles from The Ketogenic Cookbook I was intrigued, but the recipe required 4-6 hours in a slow cooker.

Having an Instant Pot, I knew I could get this meal on the plate quicker. After many failed attempts and eating plates of soggy cabbage; I found the perfect timing to create soft but textured cabbage noodles.

As rich as you like it

If I’m eating the cabbage noodles alone, I will add 1/4 cup more butter, and reduce the vegetable stock by 1/4. My favorite way to eat these is with my vegetarian spinach Alfredo sauce, which is decadent and rich, so less buttery noodles is appropriate. Think of how you will be using these noodles, and adjust the butter as you see necessary.

How to core and slice

Core the cabbage by slicing around the core from the top to the bottom, creating 4 wedges of cabbage. Place one the wedges on its flat side, and with a sharp knife carefully cut the cabbage lengthwise into very thin strips. When you get to the last part of the wedge, just julienne the rest. Repeat for all the cabbage.

Cook for 3 minutes

The butter, vegetable stock and cabbage all gets thrown together in the Instant Pot for 3 minutes. After a quick release, the noodles are ready to be enjoyed right away!


3 Minute Instant Pot Cabbage Noodles (Keto, Grain Free)

Ingredients

  • 1 medium head green cabbage
  • 1/4 cup of butter
  • 1/2 cup vegetable stock
  • 2 tsp sea salt

Turn Instant Pot to "saute." This is optional but I find it comes to pressure quicker when I do this.

Now your Instant Pot should be very hot. Add 1/4 cup butter, 1/2 cup of vegetable stock, 2 tsp of salt, and place all the sliced cabbage on top.

Set the Instant Pot to "Manual" > "3 Minutes" > "Low Pressure" and then quick release.
