  • 4 cups of whole frozen strawberries unsweetened
  • 1 cup heavy whipping cream
  • 7 Tbsp powdered* sweetener suggested: Lakanto Monk Fruit, powdered
  • 2 tsp vanilla extract
  1. Put all ingredients in a high powered blender like a Vitamix.
  2. On the lowest setting, turn on machine and use the tamper to press down the strawberries. Keep using the tamper, and mix the ice cream for 2 minutes - or until all strawberries have been pureed.
  3. If you overmix, the ice cream can become too smooth. In this case, put it in the freezer to harden before eating.
Recipe Notes

You can make your own powdered sweetener by pulsing granular sweetener like erythritol in a food processor or blender. The success of this recipe will depend partly on the size of your Vitamix container. I have a 64 ounce container, and to make the ice cream blend correctly I need to use a minimum of 4 cups of strawberries. If you have a 32 ounce container, you can probably get away with halving this recipe if you wish.
