Makes approximately 12 egg rolls depending on much you like them stuffed
Ingredients:
Egg roll wrappers
2 boneless, skinless chicken thighs
3 tbs fresh ginger root
4 cloves fresh garlic
½ cup fresh cilantro
¼ teaspoon chili crisp oil*
¼ cup fresh green onion (approximately 3 stalks)
½ of a red or orange bell pepper
½ of a green bell pepper
Coleslaw mix
Salt
Pepper
Sesame oil
*If you don’t have chili crisp oil, you can just use some chili powder or flakes. But I highly recommend trying chili crisp oil, it holds incredible flavors.

Chicken marinade:
1 teaspoon lime juice
½ teaspoon fish sauce
1 teaspoon soy sauce
Instructions:
Marinate chicken at least 1 hour
Finely chop ingredients, keeping cilantro and green onion separate
Heat skillet with a neutral oil and sauté chicken thighs until fully cooked
Remove chicken
Cook coleslaw and bell pepper until softened
Finely chop chicken and add back into pan along with sesame oil, minced ginger and garlic, cook until garlic and ginger are slightly browned
Turn off heat and add chili crisp oil
Toss cooked ingredients with cilantro and green onion in a colander
Add salt and pepper as desired, I use ¼ teaspoon salt and ½ teaspoon pepper
Put the colander in the fridge with a plate underneath for at least 1 hour. It is important to let the filling dry out like this so that the egg roll wrappers don’t end up soggy!
Fill and roll egg roll wrappers
Cook in air fryer at 400 degrees Fahrenheit for 6 minutes, flipping egg rolls halfway through
