Morel Baked Bruschetta

Earthy morels and vibrant pesto on crisp baguette slices, topped with tomato and a balsamic drizzle. A simple, elegant appetizer for spring.


Makes 6 servings

Ingredients:

  • 1 baguette

  • 3 morel mushrooms

  • Pesto

  • One roma or beefsteak tomato

  • Balsamic reduction

  • Olive oil

  • Butter

  • Salt

Instructions:

  1. Preheat oven to 400F

  2. Slice 6 pieces of the baguette into 1-inch slices

  3. Brush both sides of bread slices with olive oil

  4. Spread pesto onto bread

  5. Slice tomato and place slices on bread

  6. Heat ½ T butter and ½ T olive oil in pan

  7. Slice morels in half lengthwise

  8. Sauté cleaned morels over medium-low heat for approximately 8-10 minutes

  9. Place Morels on top of bread

  10. Bake bruschetta for 8-10 minutes, or until bottom of bread is browned

  11. Remove from oven and top with a drizzle of balsamic and a sprinkle of salt to taste
