Serves 2

Ingredients

  • Cold smoked salmon

  • Bib lettuce

  • ¼ Cup carrot

  • 2 Stalks green onion

  • ½ Large avocado

  • ¼ Cup frozen shelled edamame

  • Crushed peanuts

  • Chopped cilantro

Dressing Ingredients

  • 1 T Minced fresh ginger

  • 2 ½ T Red wine vinegar

  • ½ t sesame oil

  • 1 t Tamari (or 2 t soy sauce)

  • 1 ½ t Lemon juice

  • 1 Pinch onion powder

  • 1 Pinch cayenne powder

  • ¼ t hot honey

  • 1 pinch salt

Instructions

  1. Microwave edamame for 30 seconds

  2. Wash lettuce

  3. Chop ingredients

  4. Mix together salad dressing

  5. Assemble salad

  6. Dress salad and toss
