Smoked Salmon Rice Bowl- Nutritious Creamy Smoky

Craving a smoked salmon and cream cheese bagel, but want something gluten free and healthier? This flavorful Smoked Salmon Rice Bowl is balanced and nutritious, featuring a cream cheese sriracha sauce and lots of fresh veggies. Ready in just 20 minutes!

Makes 2 servings

Ingredients:

  • ½ cup jasmine white rice

  • ½ a large avocado, cubed

  • ¼ a yellow or orange bell pepper, minced

  • 6-8 grape tomatoes, quartered

  • ⅛ cup chopped red onion, finely chopped

  • 1 baby cucumber, quartered

  • 2 oz cold smoked salmon (1 standard-size small package)

Sauce:

  • 2 tbsp kewpie mayo*

  • 2 tbsp whipped cream cheese

  • 1 tbsp sriracha

  • ½ teaspoon soy sauce


Instructions:

  1. Cook rice according to package instructions

  2. Chop vegetables

  3. Cut or tear salmon into bite-size pieces

  4. Whisk sauce in bowl using whisk or fork

  5. When rice is finished cooking, mix it with sauce in a bowl

  6. Add vegetables and salmon

  7. Drizzle with more sriracha if desired


*If you don't have Kewpie mayo, regular will do fine.

Kewpie mayo is a Japanese-style mayonnaise known for its rich, creamy texture and slightly sweet, umami-packed flavor. It’s made with egg yolks (instead of whole eggs like regular mayo), giving it a silkier consistency and deeper color.
