Thai Turkey Lettuce Wraps

These vibrant lettuce wraps use ground turkey instead of chicken for a more affordable and flavorful option, all tied together with a tangy and sweet Thai peanut sauce.

Serves 4

Ingredients:

  • 2 lbs. ground turkey

  • 1 head butter lettuce (or romaine)

  • 5 oz can of water chestnuts

  • 4 mini sweet peppers

  • ½ a white onion

  • 1 whole carrot

  • 4 cloves fresh garlic

  • 2 T fresh minced ginger

  • Salt to taste

  • Pepper to taste

  • Red chili flakes to taste

Sauce Ingredients:

  • 4 T natural peanut butter

  • 2 T hoisin sauce

  • ½ t sesame oil

  • 2 t light brown sugar

  • 4 T soy sauce

  • ½ t fish sauce

  • 2 t lime juice

  • 8 T water

Toppings:

  • Fresh cilantro

  • Green onions

  • Crushed peanuts

  • Crunchy noodles

  • Sriracha

Instructions:

  1. Finely chop onion, carrot, mini sweet peppers and water chestnuts. Wash lettuce and tear into 'taco shell' size pieces

  2. In an oiled pan, sauté veggies and ground turkey, occasionally stirring and chopping turkey into chunks with stir spoon

  3. While its cooking prepare toppings; crush peanuts, chop green onion and cilantro.

  4. After meat is sufficiently cooked, turn heat down low and stir in sauce ingredients

  5. Serve and enjoy!
